Grilled Peaches with Port Reduction Sauce
Ingredients:
2 large yellow peaches
Light olive oil
1/2 cup Roxo Paso Melange port
1 tbl. sugar
Haggen Daz vanilla ice cream
Cinnamon
Whipped cream
Heat grill to medium heat. Slice peaches into 1/4 inch rings and lightly brush with olive oil.
In small saucepan, heat port and let simmer on low for 8 minutes. Add the sugar towards the end. Remove from heat and set aside to cool.
Place peaches on heated grill. Grill for 3 minutes on each side. Scoop out two scoops of Haggen Daz ice cream and put in desired bowl. Gently place three to four rings on top of the ice cream. Drizzled the port reduction sauce sparingly over peaches.
Top with whipped cream and a dash of cinnamon. Serve immediately and enjoy!
